Matki (also known as Moth) is a drought-resistant legume with a strong earthy smell. It is a highly versatile superfood, packed with iron and protein, and can simply be eaten along with rice or even roti. Matki can aslo be sprouted or consumed as whole beans in the form of curries and dals.
