Emmer Wheat (Khapli Gehu), unlike regular wheat, is an ear of long-grain wheat and its flour has a reddish tint. You can substitute this low-gluten flour for all-purpose flour in pancakes, cakes, and cookies, though it will not rise as much due to the lack of gluten.
